Day 1: Cultivating Life
Our journey begins by feeding our established wild yeast starter, allowing it to reach peak activity. Simultaneously, precise measurements of organic flours and pure water are combined, initiating the autolyse process – a gentle hydration that prepares the dough for the magic of fermentation.

Day 2: Developing Depth
Salt is introduced, and the dough undergoes a series of gentle stretches and folds by hand. This traditional technique develops gluten structure and incorporates oxygen without damaging the delicate yeast network, setting the stage for complex flavour development during bulk fermentation.

Day 3: The Patience of Proofing
After shaping, the dough is meticulously placed in traditional bannetons and cold-proofed for 12-24 hours. This extended, slow fermentation enhances enzymatic activity, resulting in superior flavour, texture, and digestibility.

Baking Day: From Hearth to Hand
Finally, our perfectly proofed loaves are scored by hand and baked directly on stone hearths in our high-temperature ovens. The intense heat creates that signature crisp crust and ensures a magnificent oven spring, delivering bread that's fresh, fragrant, and truly unforgettable.
